First, cook pasta to 1 minute less then package instructions and reserve 1 cup pasta water.
Now, combine eggs, black pepper, and parm cheese in bowl. Mix well and set aside for later.
Next, on medium high add extra virgin olive oil and chorizo.
Now, break up chorizo using potato masher, cook 2 min without touching,then turn and cook 1 min more.
Next mix in pasta and pasta water and stir for 1 minute to let chorizo juices marry with pasta.
Now turn off the heat and add the cheesy egg mixture. Stir immediately to combine pasta with cheese sauce.
Next add the cilantro and enjoy!
